Sip With Us: Peach Bellini

We all know how important it is to choose the right entree at brunch that matches our current flavor preferences and level of hunger. Choosing the right beverage to accompany your entree can be equally as important to ensure that all of the flavors work together to create an enjoyable brunch experience. If a Bloody Mary or Mimosa aren’t sounding like appealing options to you, I would invite you to give a Peach Bellini a try. Similar to a Mimosa in that they only contain a minimum of two ingredients, a Peach Bellini can be a welcome alternative when you want to change it up, love fruity drinks, and still want some bubbles.

So what’s the difference between a Bellini and a Mimosa? Both are made with two simple ingredients, but as you know Classic Mimosas are traditionally made with champagne and orange juice. Peach Bellini

Prep Time 5 Minutes | 6-8 Servings

Ingredients:

  • 1 bottle Prosecco (or sparkling wine or champagne)

  • 1 52-oz bottle Peach Juice (or 3 cups frozen sliced peaches)

  • 1-2 peaches, freshly sliced for a garnish

Directions:

  1. Add the Prosecco, peach juice (or peaches) to a blender.

  2. Cover and blend on high speed for 1-2 minutes until smooth. If you’re using peach juice (instead of the frozen sliced peaches), feel free to add some ice cubes as well to give it a slushy consistency, especially on a warm summer day.

  3. Pour into glasses and serve immediately, garnished with fresh peach slices if desired.
