The Bite: Bacon Waffles Recipe
Here at Gals That Brunch, we love sharing our Woman Crush Wednesdays, but today we’re officially declaring as Waffle Wednesday! More specifically, Bacon Waffle Wednesday! The perfect combination of your favorite savory and sweet breakfast items make Bacon Waffles your new favorite for weekend brunching at home. With a quick and easy recipe, these Bacon Waffles bring together two of our favorite breakfast flavors and will have you and your family/roommate/significant other going back for seconds. And maybe thirds. You can easily double or triple the recipe and freeze the extras so you can quickly grab and re-heat for a delicious breakfast option during the week.
The recipe below will guide you in the process to making your own waffles from scratch. But if you’ve got a favorite waffle mix, these are an easy variation to make, just skip the first few steps for the waffle mix and start with cooking the bacon. Bacon Waffles
Prep Time 25 Minutes | 6 Servings (Waffles)
Ingredients:
2 cups all-purpose flour
3 teaspoons baking powder
Salt
2 large eggs, separated
1 ½ cups milk
3 tablespoons butter, melted
6 slices of bacon, cut in half
Maple syrup
Directions:
Spray a waffle iron with nonstick cooking spray.
Combine flour, baking powder, and ½ teaspoon salt in a medium bowl. Beat the egg whites in a second medium bowl until stiff.
Combine egg yolks, milk, and butter in a large bowl and beat. Add the flour mixture and stir until blended. Add the egg whites.
Put 2 halves of bacon in each waffle grid and close the cover. Cook bacon for 1 minute and then add ½ cup batter to each waffle grid. Bake for about 4-5 minutes, until golden brown.
Serve with maple syrup.
