The Bite: Easy Homemade Buttermilk Pancakes
When it comes to the weekends, sometimes it’s nice to just keep it easy and simple. Whether it’s leaving the calendar a bit more open than usual, trying to find ways to relax and decompress after a tough week, or keeping life simple for two days, that’s what the weekends are all about. But that doesn’t mean you can’t help yourself to a delicious brunch-at-home meal, and on weekends when you want to take it easy, that’s when a deliciously satisfying homemade pancakes come into play. Easy Homemade Buttermilk Pancakes
Ingredients:
● 2 eggs
● 1 3/4 cups buttermilk milk (or reg. milk)
● 1/4 cup oil
● 1 3/4 cups flour
● 2 tablespoons sugar
● 4 teaspoon baking powder
● 1/2 teaspoon salt
Directions:
Heat a griddle or pan over medium-high heat (a skillet works great if you don’t have a griddle)
In a large bowl, beat the eggs
Stir in the buttermilk (or reg. milk) and oil (vegetable oil works great)
Add the remaining ingredients; *stir just until the large lumps disappear (don’t over-mix or the pancakes will not rise as much)
Lightly grease the heated griddle or pan (use a grease spray or butter)
Pour the batter (about 1/4 cup at a time) onto the hot griddle. Cook until bubbles form around the edges, then, flip and cook on the other side.
You can add berries, banana slices, chocolate chips, or nuts into your batter to customize the pancakes to your tastes.
Garnish with butter, maple syrup or any of your other favorite pancake toppings!
